VINIFICATION 3.6 tons were hand picked on oct 9. intensive hand-sorting
performed. whole cluster pressed. cold fermented in stainless
steel tanks (no oak) using a wild yeast. naturally occurring
malolactic fermentation. 6-month fine lees contact.
SITE a mountain top vineyard at 1600 feet looking down on the
anderson valley. wente clone chardonnay planted on original
rootstock (1982 axr-1). soil type is shallow layer of clay on top of
fractured rock. intense daily temperature fluctuations of 40
degrees. extreme climate produces late harvest dates (4-weeks
later than valley floor) and naturally low yields.

many of you who tasted this wine in 2007 connected with the
place. and those of you who acted quickly may have actually
sold some! it did go quickly, which is what happens when the
music matches the words. the words told a story of a
windswept, mountain top vineyard in sparkling wine country
which housed a parcel of phylloxera-sacked, wente-clone
chardonnay on original axr-1 rootstock. the music was an
irrefutably terroir-driven chardonnay that displayed a mineral
essence few california chardonnays do. in 2008, the "year of fire
and ice," yields were severely reduced. there is thusly very little
of this wine to go round. what you'll find in the 08 demuth is an
expression more pure and limpid than the 07. "crystalline"
seemed to be the buzzword while tasting the wine during its
elevage.
